A member shared a great new recipe at my Weight Watchers Meeting.  It’s called 3-2-1 Cake. It’s so simple and super low in points.  I couldn’t wait to come home and try it.  And get this, it actually tastes good.

Ingredients:

1 Box Angel Food Cake Mix

1 Box of Your favorite Cake mix

Water

Crème Brule Ceramic Cup or Coffee Mug

Steps:

1) Add both boxes of cake mix in a zip lock bag. Mix together well.

2) Add 3 tablespoons of cake mix to the cup/bowl

3) Stir in 2 tablespoons of water and mix well

4) Microwave for 1 minute

5) Top with whip cream or cake icing or fruit

 

3-2-1 Cake

Makes 33 servings, Weight Watcher Points Plus = 3 (About 80 Calories)

* It’s called  3 2 1 Cake because you use 3 tablespoons of mix, 2 tablespoons of water and 1 minute in the microwave. I learned the “hard” way that sometimes one minute might actually be too long. The first mini cake I made was so hard and crunchy that I had to cut it with a knife.  I realized it was over cooked.  It finally turned out just right after the 3rd time around with about 40 seconds.

  1. I love microwave cupcakes/desserts/and such, and I really love Angel Food cake, so I will have to give this a shot.

    Chocolate breakfast Bran muffin!!

    1/4 cup Oat Bran
    1 tsp Xylitol (or 1 packet stevia)
    1 tsp of baking powder
    2 tsp of coconut oil
    1 tsp of cinnamon
    1 egg
    1 tsp chocolate protein powder ( OR VANILLA with 1 tsp of mini chocolate chips)

    Mix ingredients and put in a coffee cup, microwave for 45 seconds, tip cup over and it will slide right out, top with honey or fruit and enjoy!!

  2. When I figured out the points using Betty Crocker Lemon Cake and Angel Food cake it was 4 pp per cake. So I think you should make a note that it varies based on cakes used… and I also figured out the servings to be 28… based on weight not volume as the cake mix can be clumped together.

  3. Does anybody know the point count with the “old” Weight Watchers system? I can’t believe it would be more than 1-2 points.

  6. I love the WW 3-2-1 cake! Have you tried it using flavoried (zero calorie) water? I’ve used Chocolate Mint Metro Water and it was fantastic. I like adding in a sprinkle of sliced almonds or fresh or driedd fruit to jazz it up a bit. I also like to spray the pan first w/non-stick spray so it cooks more evenly.
