Oatmeal is usually pretty boring to me.  I might get fancy and add some sliced bananas, but that’s about it.  Being on the Daniel Fast (Vegan, No Meat, No Sugar, No Dairy, No Alcohol, No Fried) has forced me to think outside the box.  Yesterday I made baked apples.  Normally I would think baked apples need loads of butter and sugar.  Both of which are not allowed during the fast.  So, I made baked apples with unsweetened  apple juice and cinnamon.

Baked Apples

Ingredients:

2 Cups thinly sliced apples, unpeeled (about 2 apples)

1 Cup of unsweetened apple juice

1/4 Teaspoon of cinnamon

Preheat oven to 350.  Place sliced apples in a 8×8 inch baking dish.  In a small bowl whisk apple juice and cinnamon and pour over apples.  Bake 15 minutes, stir, and bake another 15 minutes.  Serve warm.

Notes: You can add bananas, raisins and chopped nuts or sprinkle unsweetened coconut flakes and chopped pecans on top.

Oatmeal with Baked Apples for Breakfast

This morning I added the baked apples and some almond butter to my oatmeal.  I know that fruit with oatmeal is not revolutionary, but it was certainly different for me to enjoy oatmeal with no butter or sugar.
