No sugar, No Meat, No Dairy, No Fried

I’m currently on my 7th day of doing the Daniel Fast. In essence that’s no sugar, no meat, no dairy, and nothing deep-fried. That’s a whole lotta No’s, but I was determined to find and focus on the Yeses. Last Night I had a Strawberry Spinach Salad. I added pecans, golden raisins, and sunflower seeds. For the first time in my life I made homemade salad dressing. All of the store bought salad dressing had sugar or preservatives, both which are restricted during the fast.

So I made Apple Cinnamon Salad Dressing
1/4 cup extra virgin olive oil
1/4 cup unsweetened apple juice
1 tablespoon fresh lemon juice
1 tablespoon diced red onion
1/4 tablespoon cinnamon

Combine all ingredients in the cover glass jar and shake well refrigerate until ready to use.
