Turkey Squash Casserole

I tried a new healthy recipe, its low carb and high protein.


Ingredients:
1 Large Yellow Squash
1 lb of Ground Turkey
1 Tbsp Worcester & Soy Sauce
Salt, Pepper & Garlic (for taste)
Optional Rosemary, Dill and Cumin
2 Cans of Beans (Pinto, Navy or Black)
3 Cups of Broccoli
¼ Cup of Feta or goat Cheese

Directions:

  1. Slice up the yellow squash
  2. Fry the turkey in Worcester and soy sauce, until the turkey is brown (or just slightly pink in the middle)
  3. Line bottom of the casserole dish with the squash slices, Sprinkle with salt, pepper and optional rosemary, dill, and cumin.
  4. Spread turkey on top of squash slices 
  5. Top with beans 
  6. Then spread Broccoli evenly
  7. Sprinkle Cheese across the top. (I used a fiesta blend cheese because that’s what I had in the fridge.)

Cover with aluminum foil and Bake at 300 for 45 mins to 1 Hour
